Passionfruit Grapefruit Mousse

Inspired by Brazilian Passionfruit Mousse, this tangy mousse is the perfect summertime treat.


Just look at her.
Creamy passionfruit mousse with tangy grapefruit zest, tart passionfruit sauce, and sweet vanilla whipped cream. What more could you ask for in a dessert? Seriously. You've gotta be grateful for what you've got, because if you ain't grateful, the magical mousse fairies will come and steal all of your mousse at night. So you better make this and eat up before they come for you.

Ingredients:

For the mousse:

  • 1 tbsp unflavored gelatin

  • 3 tbsps water

  • 1/3 cup grapefruit juice

  • 1 1/2 cups heavy cream, chilled

  • 1 can (397g) sweetened condensed milk

  • 1 cup passionfruit pulp or unsweetened juice

  • 1 tbsp grapefruit zest

For the sauce:

  • 1/2 cup passionfruit pulp or unsweetened juice

  • 3 tbsps white sugar

For the vanilla whipped cream:

  • 1 cup heavy cream

  • 1/2 tbsp vanilla bean paste

  • 3 tbsps powdered sugar, sifted

Directions:

  1. Mix the gelatin and water in a microwave-safe cup, and microwave for 30 seconds to melt the gelatin. Stir to ensure there are no clumps. Mix in the grapefruit juice to cool the liquid.

  2. In a blender, combine the heavy cream, sweetened condensed milk, passionfruit pulp, gelatin-grapefruit mixture, and grapefruit zest. Blend until the cream thickens, which should take roughly five minutes.

  3. Pour into 7 serving bowls and refrigerate for at least 3 hours.

  4. Prepare the passionfruit sauce by combining passionfruit juice and sugar in a saucepan over medium heat. When the sugar has fully dissolved, remove the mixture from the heat and allow it to cool.

  5. Prepare the vanilla whipped cream by whipping the cream, vanilla, and powdered sugar with an electric hand mixer or a stand mixer for five minutes, or until stiff peaks form.

  6. When fully chilled, remove the mousse from the fridge and top with passionfruit sauce and vanilla whipped cream.

  7. Serve and enjoy!
