Keto Dark Chocolate Mousse

fluffy, creamy, and shockingly sugar-free

No cream, no sugar... usually that means no joy either.. but not today, buddy. This mousse is shockingly scrumptious. I don’t usually go for keto or ‘diet’ recipes, but this one just happens to check those boxes accidentally. So hey, be healthy if you want... but deliciousness is the only thing I was going for. :)



Ingredients:

  • 5 oz unsweetened chocolate chips

  • 1 tsp vanilla bean paste, or extract

  • 1/2 tsp salt

  • 4 eggs, divided and at room temperature

  • 1/3 cup allulose sweetener, or any preferred sweetener


Directions:

  1. In a large microwave-safe bowl, microwave the chocolate in 30-second increments until fully melted; be careful not to burn it. Mix in vanilla bean paste and salt.

  2. In a medium bowl with an electric mixer, whip up egg whites until soft peaks form. Add in the sweetener and continue whipping until stiff peaks form; this should take roughly 4 minutes.

  3. Mix egg yolks one by one into the chocolate mixture. If the mixture seizes or hardens, simply mix in warm water one tablespoon at a time until the mixture becomes glossy again.

  4. Gently fold in the egg whites with a spatula, and pour into your serving dishes.

  5. Refrigerate for at least three hours and up to three days before serving.

  6. Spoon, serve, and enjoy!


Note: If you aren't on a sugar-free diet, feel free to use dark chocolate instead of 100% cacao, as 100% can be hard to find sometimes. You can also use sugar as your preferred sweetener; just use 1/4 cup instead of 1/3 cup.
